A new menu is created daily to perfectly suit your taste, based on a survey you are asked to complete before you even arrive on the island and special dietary needs and requests can also be accommodated. Hot off the Press…Cayo Espanto's Chef Patrick Houghton, Professional Chef of the Year 2006! Chef Patrick is a graduate of the California Culinary Academy and is trained in European, French and Italian cuisine. The gifted Chef Patrick combines the structure of his formal training and authentic techniques with soulful creativity and innovation resulting in an amazing masterpiece on every plate. Simply put, the personalized creations are an awakening to the palate.
